ducky duck duck..

i crocheted this little guys several months back.. he was initially intended for a niece or nephew but i never got around to giving him up.. i think he's funky and cute and i like him.


his beak's a little crooked but
i think it gives him character =]


and he's got jingle bells inside!

will you be mine..

valentines is just a few days away and i couldn't be happier! it is one of my favorite holidays! people sometimes find it odd that i love it so much.. especially since i don't have a boyfriend to spend it with or anything. the way i see it.. once i do have a man to spend valentines with, it will just be icing on the cake =]

i have been making valentines cards the past few nights.. it's so fun to be creative and make pretty things. all the papers and colors.. the sparkles.. they make me happy!

gluten free granola..

today I decided to make gluten free granola!

i have been living gluten free for a little over 2 years now. it was hard in the beginning but now it's a piece of cake.. especially when i find yummy recipes like this one! i found this one in Martha Stewart's Everyday Food magazine (which i love! if you've never looked at one i'm telling you, buy it. you'll love it too!).. the recipe wasn't originally gluten free but i made a few adjustments here and there and vwhalla! 100% gf.. 110% tasty!

here's the recipe.. try it!


to make it you'll need:
  • 6 cups Bob's Red Mill old fashioned rolled oats
  • 1 1/2 cups coarsely chopped raw pecans
  • 1 1/2 cups coarsely chopped raw almonds
  • 1 teaspoon coarse salt
  • 6 tablespoons melted butter
  • 2/3 cup honey















#1. in a large mixing bowl add the oats








#2. add pecans, almonds and salt.. stir the dry ingredients together


#3. add the melted butter, and honey.. mix well to coat evenly


i absolutely LOVE this pan. it's the most amazing pan i've ever cooked with. it's great for cookies.. i like to make roasted veggies on it.. granola.. even pizza! it's a great multi purpose pan and if you want one of your own, click here to buy one!


#4. spread granola mixture onto baking sheet and put into a 300 degree oven. cook for 30 minutes stirring half way through


#5. let cool completely on wire rack and store in an airtight container for up to 6 weeks
(believe me.. it WONT last that long)
